Vegan Hack: Turmeric Tofu Eggs

IMG_1001Trying to go vegan, but love eggs too much (like me)? Fear no more!

  1. Grab some tofu (like this firm tofu from Trader Joe’s)
  2. Remove from sleeve and pat down with a paper towel
  3. Cut into various sized cubes
  4. Sauté on a pan while breaking apart bigger chunks with coconut oil, lots of seasoning, and the secret ingredient TURMERIC! 😛

Not only does this look like egg and taste amazing, but no chickens were harmed in the making of this easy meal.
